I would have to say wood/charcoal is better to barbecue with. You get more flavor and it is a lot easier to smoke meat with. I think if you use propane/gas you might as will go to the store and get a you a George Foreman grill which is a highly overrated waffle iron or get one of those pans used to leave grill like marks on your food.

I understand the convenience of gas/propane grills, you turn a knob and it is on.

Charcoal is not that hard to start with a chimney starter. you put wadded up newspaper in the bottom part of the chimney starter, put charcoal in the top part of the chimney starter, light the newspaper, walk off and come back in 20 minutes and you are good to go. If you have a grill with a firebox on the side and you want to smoke some ribs, brisket or some other large piece of meat you start the charcoal with a chimney starter and put a few split logs on top and once the logs get going you are ready to go.

I have learned from experience that gas is the most convenient and easiest to handle, but wood and charcoal has the best taste. Also wood is more natural...

I like charcoal myself. My friends and I BBQ'd in my backyard one time, and after 1 hour of trying to get the propane to work, we biked to a convienence store and bought charcoal fluid ( roughly the same as lighter fluid ) and started a nice little fire. It all cam out nice in the end ( except for the fact that someone ate the leftovers that was SUPPOSE to be my dinner ) T.T

Question

Gas for speed, though for taste, and during/after meal heating, wood/charcoal.

Done own smoked salmon on propane - large plain stainless steel box with lid and griddle tray. With blackberry leaves, apple tree wood shavings, pine wood shavings and other leaves of fruit bushes in bottom of box.

Heat box for 45 mins to an hour (admittedly a proper smoking house with a ton of specific wood shavings for fuel would be batter, bur not cheaper), makes a nice mild smoke taste.

Charcoal/Wood should be better. The barbequed food tastes better. I never tried using gas before. Afraid that it may explode before I even start the barbeque.I'm not good with fires....
